Description of the research activity:
As part of the project, the omics techniques (proteomics and metabolomics) will be used to characterize some traditional South Tyrolean fermented foods in order to identify bioactive molecules in gut-brain communication. The presence of these molecules during the digestive process will also be assessed. Indeed, these molecules can be generated during fermentation or released/produced during digestion. The structural, functional and behavioral dynamics of bioactive molecules within the intestinal ecosystem will also be explored. The overall aim of the project, which is part of a larger European Social Fund Plus project (ESF2_f3_0006), is to demonstrate a two-way communication between the gut and the brain through the consumption of fermented foods, with a focus on improving mental health.
